Using fresh Zucchini, Corn and Okra from our garden…

Zucchini, Corn, Okra Chowder



2 Potatoes, diced
1/2 Onion, chopped
1/2 cup Celery, chopped
1/2 stick Butter
1/2 cup White Wine
2 cloves Garlic, minced
2 tablespoons Flour
2 cups homemade Chicken Broth
3 cups fresh Corn
1 Zucchini, chopped
1 Yellow Squash, chopped
6 fresh Okra, sliced
1/8 cup Cilantro, chopped
1 teaspoon Kosher Salt
1 1/2 cups whole Milk
1 1/2 cups Half-and-Half 


Cook the potatoes by boiling over medium heat in water.

In a large pot over medium heat, melt butter. Add onion and celery and cook until softened. Add garlic, and cook until fragrant. Add wine and cook until reduced by half. Add flour and stir.

Add chicken broth and bring to a simmering boil. Add zucchini, squash and okra. Bring back to a simmering boil. Cover and cook until vegetables are tender. Add salt, potatoes, milk and half-and-half. Bring back to a boil and cook until thickened.

Taste and add salt and pepper to taste. Garnish with Cilantro.
