Fresh Garden Produce Grilled and to Your Table!
Grilled Summer Squash and Tomato Vinaigrette
1 medium Zucchini, sliced in 1/4″ slices
1 medium Yellow Squash, sliced in 1/4″ slices
3 Roma Tomatoes, sliced in 1/4″ slices
1 large Red Bell Pepper, seeded, cut in half and press to flatten
1 Jalapeño sliced lengthwise and seeded
1 small Red Onion, sliced thin
2 Onion Rolls, buttered
2 slices Jalapeño Cheese
3 tablespoons Red Wine Vinegar
1 tablespoon fresh Lemon juice
1 tablespoon Honey
1 Garlic clove, minced
3 tablespoon fresh Basil, sliced thin
Kosher Salt and freshly ground Black Pepper
Heat grill and oil.
Toss the Zucchini, Yellow Squash, Tomatoes, Jalapeño, Bell Pepper in Olive oil. Season with salt and pepper.
In a bowl, mix onion, vinegar, lemon juice, honey, garlic, and basil. Set aside for at least 1/2 hour.
Grill all the vegetables approximately 3 – 4 minutes each side or until charred.
Grill to toast the buns.
Chop the tomatoes and add to the vinaigrette….
Layer on the bottom bun, red pepper, squashes, jalapeños. Spoon some vinaigrette and top with cheese. Put back on the grill to melt the cheese.
Top with the top bun and serve.
